Today's post will be a lovely little recipe for Chocolate Vanilla Swirl Shortbread Cookies.
They are so adorable and make great gifts for friends and family!
Vanilla dough:
160g of plain flour
100g of (vegan) butter
50g of caster sugar
1tsp of vanilla essence
Chocolate dough:
110g of plain flour
20g of cocoa powder
100g of (vegan) butter
50g of caster sugar
- To make the vanilla dough, place plain flour, butter, caster sugar and vanilla essence into a food processor and blitz until all ingredients are thoroughly mixed.
- Take mixed ingredients into a mixing bowl and knead together with your hands.
- Wrap the dough with cling film as you prepare the chocolate dough.
- To make the chocolate dough, repeat steps 1 & 2 but with the chocolate dough ingredients. (Note: If you find the dough too dry, add a couple drops of water!)
- Remove the vanilla dough from cling wrap. Roll out dough into a square (or at least try your hardest). Cut the edges of the dough to make it a more accurate square. Remove excess dough and roll it into a ball and wrap it back up for later use.
- Repeat step 5 with the chocolate dough.
- Place the square of vanilla dough on top of the square of chocolate dough and roll it up gently like a Swiss roll. Wrap it up in cling wrap and chill it in the refrigerator for about an hour.
- Preheat oven to 180 degrees Celsius.
- Take rolled up dough from fridge and unwrap it. Slice roll into 5mm slices (or however thick you want it).
- Bake for 20 minutes then transfer to wire rack to cool.
- Since you probably have heaps of dough left over, roll it out and make whatever shapes you want with it, then repeat step 10. )
