FOOD / Vegan Shepherd's Pie
Hello and welcome!
2 carrots
1 brown onion
10 white cup mushrooms
1 1/2 cup of lentils
2 garlic cloves
7 potatoes
2 cups of vegetable stock
1 cup of soy milk
1tbs of (vegan) butter
1/4 cup of (vegan) bbq sauce
-- note: most bbq sauces are vegan!
- Dice vegetables.
- Heat pan and add oil. Add vegetables and saute for 5 minutes.
- Add lentils and vegetable stock. Bring to boil and simmer for 30 minutes.
- Preheat oven to 200 degrees Celsius.
- Peel and cut up potatoes. Boil for 15 minutes. Drain, mash and add butter and soy milk. You can also add seasoning of your choice. I added garlic salt!
- Add BBQ sauce and soy sauce to vegetable and lentil mixture.
- Scoop mixture into pan and spread mashed potatoes on top.
- Bake for 15 minutes.
