FOOD / Vegan Vanilla Cupcakes!

Today I decided to try to make vegan cupcakes. I am a novice baker and new to veganism, but I really wanted to try this out!
I used recipes from Taste.com.au which weren't vegan but substituted vegan products. I will link the original recipes at the bottom!

Cupcakes:
2 cups of self-raising flour
3/4 cup of caster sugar
2 flax eggs
(1 flax egg = 1tbs of flaxmeal + 2tbs of water)
3/4 cup of soy milk
125g of (vegan) butter
1tsp of vanilla essence
Butter cream:
63g of (vegan) butter
3/4 cup of icing sugar
1tbs of soy milk
- Preheat oven to 200 degrees Celsius and line/grease your cupcake pan.
- Combine flour and sugar, and create a well.
- Add all other ingredients and mix gently.
- Spoon mixture into cupcake pan and bake for 12-15 minutes.
- Let the cupcakes sit and cool down completely before adding frosting
- To make the butter cream, use an electric hand mixer to beat the butter and gradually add sugar and soy milk.
- Scoop butter cream into a piping bag and decorate your cupcakes!
