FOOD / Vegan Vanilla Cupcakes!

Hello and welcome to my blog!

Today I decided to try to make vegan cupcakes. I am a novice baker and new to veganism, but I really wanted to try this out!
I used recipes from Taste.com.au which weren't vegan but substituted vegan products. I will link the original recipes at the bottom!




Cupcakes:
2 cups of self-raising flour
3/4 cup of caster sugar
2 flax eggs
(1 flax egg = 1tbs of flaxmeal + 2tbs of water)
3/4 cup of soy milk
125g of (vegan) butter
1tsp of vanilla essence

Butter cream:
63g of (vegan) butter
3/4 cup of icing sugar
1tbs of soy milk


  1. Preheat oven to 200 degrees Celsius and line/grease your cupcake pan.
  2. Combine flour and sugar, and create a well.
  3. Add all other ingredients and mix gently.
  4. Spoon mixture into cupcake pan and bake for 12-15 minutes.
  5. Let the cupcakes sit and cool down completely before adding frosting 
  6. To make the butter cream, use an electric hand mixer to beat the butter and gradually add sugar and soy milk.
  7. Scoop butter cream into a piping bag and decorate your cupcakes!
