FOOD / (Mini) Vegan Open Lentil Pies

I've got a new recipe which I ended up making up and winging! They turned out quite nice but I may be bias because I just loooove puff pastry...
I've got a new recipe which I ended up making up and winging! They turned out quite nice but I may be bias because I just loooove puff pastry...
1 cup of lentils (I used a soup mix for this recipe!)
1 carrot
1 brown onion
1 large clove of garlic
pinch of thyme
1 cup of vegetable stock
3 sheets of frozen puff pastry, thawed
1tbs of (vegan) bbq sauce
splash of soy sauce
- Preheat oven to 180 degrees Celsius and grease cup cake tray.
- Place cup of lentils into pot and add 1 cup of vegetable stock. Bring to boil and simmer for 10 minutes.
- Chop up vegetables and on a separate pan, bring to heat and add oil. Add all vegetables and stir fry for a few minutes.
- Add your vegetables to the lentil mixture pot.
- Add bbq sauce and soy sauce and mix well.
- Cut puff pastry into smaller squares (eg. 3x3 squares)
- Place squares into cupcake pan.
- Add dollops of mixture on top of the pastry.
- Bake for 10 minutes.
